To help you make the most of autumn, here is a delicious and decadent fall recipe for iced pumpkin cookies. To make them, you’ll need:

  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • ½ teaspoon of ground nutmeg
  • ½ teaspoon of ground cloves
  • 2 ½ cups of all-purpose flour
  • 2 teaspoons of cinnamon
  • ½ teaspoon of salt
  • 1 ½ cups of white sugar
  • ½ cup of softened butter + 1 tablespoon of melted butter
  • 1 cup of canned pumpkin puree
  • 1 egg
  • 2 teaspoons of vanilla extract, divided
  • 2 cups of confectioners’ sugar
  • 3 tablespoons of milk

Preheat your oven to 350 degrees F.
In a large bowl, mix together the baking powder, baking soda, nutmeg, cloves, flour, cinnamon, and salt.
In a medium bowl, cream the white sugar with ½ cup of softened butter. Mix in the pumpkin, egg, and 1 teaspoon of vanilla; beat until the mixture is creamy. Hand mix in the flour mixture.
Using a tablespoon, drop the cookies onto a baking sheet, flattening slightly as you go.
Bake for 15 to 20 minutes. In the meantime, combine the confectioners’ sugar, milk, 1 tablespoon of melted butter, and 1 teaspoon of vanilla. Add milk if needed so you can reach a drizzling consistency.
Let your cookies cool, then drizzle with your glaze and enjoy!
