Summer is upon us, and the mercury is rising. As the weather warms, you want to put healthy and nourishing meals on your table that work with the summer season. Prepare a healthy and easy dinner that your whole family is sure to love by using this summer recipe for salmon burgers!
- 1 cup of red onion, finely chopped
- ¼ cup of fresh basil, thinly sliced
- ¼ teaspoon of freshly ground black pepper
- ¼ teaspoon of kosher salt
- 1 1-pound salmon fillet, skinned and chopped
- 1 tablespoon of hot sauce
- 1 large egg white
- 8 slices of focaccia, toasted
- Cooking spray
- Burger toppings (e.g. lettuce, sliced tomato, sliced onion)
In a large mixing bowl, combine the onion, basil, pepper, salt, and salmon. In a separate, smaller bowl, whisk together the hot sauce and egg white. Fold this into the salmon mixture until everything is evenly combined.
Split the salmon mixture into 4 parts; shape them into ½ inch thick patties.
Coat a nonstick skillet with your cooking spray and heat over medium-high. Add your salmon patties and cook until done (about 3 minutes each side). Serve warm on the toasted focaccia with your favorite burger toppings, and enjoy!
